not what you’re thinking, debbs! grandma betty does have plenty of recipes that call for booze, but unfortunately i’m not reporting in on that one. when we were growing up, i always wanted to make spaghetti sauce just like mom did…well, i never knew how. then the magical book came along at christmas and there was the recipe! i was so excited to finally have my chance to make the sauce that we grew up using! (making a sauce in my house is a huge challenge as it better live up to my italian husband’s standards!)
i tried the recipe immediately after i got it…though i made some adjustments. this is what i got when i was done:
Grandma Hollenbach’s Spaghetti Sauce (the Italics are my variations)
Ingredients:
Spare Ribs – Hamburger – or Chicken (1 lb of hamburger and 1 lb of Italian sausage)
4 Large Onions – Sliced (White Onions worked best here – I used medium sized and chopped them)
1 Quart Tomatoes
1 Clove Garlic – Cut Fine (3 Cloves of Garlic – 1 is never enough!)
1 Sprinkle Red Pepper
Some Green Pepper (1 green pepper, 1 red pepper, 1 yellow pepper – chopped)
Salt
Pepper
2 Cans Tomato Paste
Oregano – to taste
Thyme – to taste
Instructions:
Fry the hamburger in a skillet (Warm oil in the skillet, add the 1/2 of the onion and garlic and cook until softened – about 3 minutes. Add the beef to brown the hamburger with the onion and garlic flavor – add salt and pepper as you like)
In a large sauce pan, add the tomatoes, rest of the onion and garlic, peppers, red pepper flakes, salt, pepper, oregano and thyme. Let simmer for 2.5 hours.
Add the tomato paste and cook until thickened. Taste and season throughout the process.
Pour over noodles and sprinkle with Parmesan. I used penne noodles as Joe hates spaghetti noodles.
this sauce is great because it’s good for about a week and reheats wonderfully. it does make a huge amount, so you may want to cut some of the numbers in half.
