Betty’s Danish Puff Pastry

Hi,  I am Betty’s oldest daughter, and since my daughters have gotten interested in Mom’s recipe book, I thought for our 40th Anniversary I would make these for the kids.

As our oldest grandson Cody observed, mom’s cursive is something to read. So here is the recipe.

Danish Pastry Puffs

mix like a crust:

1 cup of flour

1 stick of butter

add 2 tbsp of cold water and mix.  Split it in 2 parts and put on a cookie sheet.  It takes 2 recipes for a large cookie sheet as we normally use.

1 cup of boiling water

1 stick of butter

1 tsp of almond extract

Bring to a boil, add 1 cup of flour and cook unitl it does not stick to the side of the pan. Remove from the heat and add 3 eggs, 1 at a time beating well.  Spread on top of crust mixture.  Bake at 425 for 50 minutes.  However, when I did  it, it took about 35 minutes.  Mom’s oven must have baked more slowly.  Frost while warm with a powdered sugar frosting.  I really like the powedered sugar and cream cheese and butter frosting.
